Easy Vegetable Soup

Cook time 20 to let flavors come together




-4 small carrots

-1 cup frozen green beans

– 1 cup frozen corn

-2 cups frozen peas(I love peas)

– 1 stalk celery

-Mushroom broth(large) plus 2 extra cups

-Seasonings: Black Pepper, white pepper, salt, and turmeric

Take a large dollop of ghee, let it melt down. Add 1 heaping teaspoon of turmeric, black and white pepper into ghee. After all is ghee is melted, Then add chopped up leeks 1.5 cups chopped, cover and let simmer until leeks are good and tender. While leeks are cooking clean and cut the carrots and celery. Add broth and water to the tender leeks and begin adding the other veggies. Add the salt and let simmer for 20 mins. to let flavors dance together.

This is nice to have something light at night. Also, you can put in a plastic container in the freezer and thaw when you are ready to eat, it is a nice substitute for canned soup that is high in sodium.
